Can a wall be removed to open up the home?

That cannot be decided from appearance or a floor-plan sketch alone. The proposed change requires assessment by the appropriate professional and confirmation of relevant permissions before it enters an executable scope.

Why might the scope change after assessment?

Existing homes can contain conditions that are not initially visible. A useful proposal explains assumptions, identifies assessment limits and establishes how additional findings will be documented and agreed.

Is demolition included in an interiors quote?

Only if explicitly listed. Check removal quantities, protection, debris handling and making-good responsibilities. Broad terms such as renovation or full-home do not automatically include every civil activity.
